做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开(kāi )后转中(zhōng )火。煮到(dào )水快熬(áo )干(gàn )的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅盖焖。
