做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后(hòu )用清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
