做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱(cōng )切(qiē )成(chéng )段(duàn )。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
