做法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大火(huǒ )煮开后(hòu )转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
