做法(fǎ ):春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
