做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻(fān )炒均(jun1 )匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖(gài )焖。
