做法:春笋切成片后(hòu )加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
