做法:春笋切成片后加(jiā )少许(xǔ )盐捞出(chū )后用清水浸(jìn )泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬(áo )干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
