做(zuò )法:春(chūn )笋切成片后(hòu )加(jiā )少许盐捞(lāo )出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀(yún )稍(shāo )收汁时盖上锅盖焖。
